Of the top of my head, Saving Private Ryan (the beach scenes), Odd Man Out, Henry V (the Olivier version), Braveheart (those tax breaks again!), The Blue Max, Darling Lilli (used the planes left over from the Blue Max) and a Roger Corman flick (again using the same planes). The Fu Man Chu films from the 1960's (apparently 1960's Dublin needed very little redressing to look like Edwardian London), The First Great Train Robbery (the train and station scenes), The MacIntosh Man and The List of Adrian Messenger (Huston was living in Ireland at the time). And of course Hear My Song and the new film, 'The Guard'. There was also a film made in the 1970's set in Northern Ireland about an American joining the IRA. I have no idea of the name, but I do remember it being featured on 'Clapperboard'!
There might be a bit of one of the Doctors films set in Ireland, although knowing their budgets, probably not.

I think the book 'Worldwide Guide to Movie Locations' and the UK equivelant might have much of the info your looking for. Or you could order 'World Film Locations Dublin' World Film Locations Dublin: Amazon.co.uk: Jez Conolly, Caroline Whelan: Books which released soon (While looking on Amazon for a locations book, I found that there is a book called 'British Horror Film Locations' - damn, another one to go on the 'must buy' list!).
Looking at the Wiki page, I was really surprised at how many newer films there were (tax breaks!), but also a fair number of films shot there pretending to be elsewhere (The Italian Job). On the other hand, there must be a fair number of 'Irish' films shot on the back lot of Pinewood or Culver City.
Once, a lovely film set in Dublin featuring Glen Hansard as a musician who wants to compile a cd of his own songs and go to London and get back with his girlfriend. GH was with the Commitments, the music is very good.
When Brendan met Trudy a comedy romance again set in Dublin, a teacher with a beautiful voice meets a girl. 'Come on Brendan, sing me Penis Angelicus'

Thanks to all who have posted suggestions - some good one's I had forgotten - and how could I have forgotten 'Once' and 'Ryan's Daughter', I made a pilgrimage to the film location a few years ago - just the old school house standing now and that won't be for long by the look of it and the force of the wind that hits that place!
