I have just been watching Hugh Fearnley Whittingstall mediaval Christmas feast,with a multi-roast of ten birds stuffed into each other,smoked ham,a cake with marzipan shaped like a pig's head,a giant tree with sweets and fruits as decor,all the guests dressed in appro. gear. It looked great.

Not when I cook it, it ain't! It's moist, juicy and succulent because I cover both breasts in a forcemeat stuffing - the turkey's that is.............
People don't use the proper stuffing in sufficient quantity - and then they stuff the wrong orifice!
I have done exactly the same with my Peru bird, so I am anticipating the same results.

I'm actually about to get it out now and, after, I'll be taking the Peru bird out of the oven.......

Exactly, or whatever else people put on or in it.
Whereas with Goose or various other things you have a very tasty meat as well.
Turkey is just another of those bland American imports. I don't know, they come over here and hijack our traditional Christmas

The flavour infuses the breasts (of the Peru bird) and the fat, herbs and seasonings keep the meat moist and flavoursome - coupled with the layer of smoked bacon over the top. At least you don't pay for a bird which is 50% fat. However, the stuffing is favoured by some in the Lovett household as being as much of the Christmas tradition as the Peru bird!

You can't blame the Americans for Thanksgiving - it was started by the Pilgrim Fathers; 38 British settlers who landed at Berkeley Hundred in 1621.
The turkey originated in Mexico and was taken to Europe by the Spaniards and taken back to North America by early settlers, so you can't blame the Americans for that either!

I like well infused breasts. But I do prefer them to have some taste and substance after you've licked off all the garnish and dressings

The colonists became Americans as soon as they landed so I blame them for lots of things
(But always with a smile on my face. I like them really)

But I do especially like their Thanksgiving holiday because it means that there's another holiday for retailers to concentrate on just before Christmas which (hopefully) prevents them starting to put Christmas things in the shops in July
