Well, I think that a lot of the recipes in the pie and mash shops are probably 'Trade Secrets' - but I've just found one on the Net:

Ingredients - Liquor

400ml Chicken stock
2 tbsp Arrowroot
4 Tbsp finely chopped fresh parsley
1 tbsp white wine vinegar
4 Tbsp potato water

The liquor is made by melting the butter in a pan, add the arrowroot, stir in the stock, the water from the boiled potatoes, parsley and vinegar, if it goes lumpy use a hand processor to blend smooth. You can use cornflour instead of arrowroot but arrowroot thickens with a clearer finish and is more authentic.

Traditionally, the mash is just mash - and has no butter or milk added.

To tell the truth, I've never tried it myself!

It's lovely......like a Vinegary Gravy, and complements Pie and Mash perfectly, I prefer it to 'real' Gravy to be honest!

Takes me back to my old stamping ground of Red Lion Market, just off Camberwell Road in Walworth. Nice pies, but too much liquor for me. Nice enough in small quantities....

Bit of a Bay Window, what??

My grandad was a native of Hoxton, Jellied eels, whelks, cockles, Clapton Orient, Loos, The Somme.....life was cruel to him......................

If I could just save up enough for diesel to get me to Portsmouth, I'd be tempted to leave for France or Spain . I love where I live but the rest of the UK seems to be closing in on me! Besides, the UK is a very boring place these days better to go somewhere where they still have a culture and some pride.

I'm hoping to leave these shores in the next 5 years. To quote Napoleon, "All glory is fleeting" and that is true when describing the fate of this tiny island. You'd either have to be deluded or in total denial to believe that this country is on the up, it's descending down hill quicker than a mountain bike without brakes.

I live on a council estate in Manchester and I'm telling you now chaps and ladies, climate change is the least of our worries. You know that poster you've seen countless times called The Ascent of Man, well I think we just about peaked at the turn of the last century.

If you own property in the UK, get it sold and don't look back.
