6 tablespoons sherry
6 tablespoons broth
1 tablespoon sugar
3 slices of root ginger
1 ½ tablespoons chopped onion
½ chicken stock cube

Add all ingredients into saucepan. Heat and simmer for 15 minutes. Stir occasionally.

Sauce keeps well in sealed jar in fridge.

Tip
If the weather permits the ribs can be finished over a barbecue instead of in the oven

Default Garlic Bread

Garlic Bread

Ingredients:

1 x Baguette (French Stick)
2 x Cloves Garlic, crushed
4ozs Butter, softened - or Spreadable Butter
Salt & Pepper

Preheat the oven to 350F/180C/Gas Mark 4.

Cut the loaf into 1" slices - but not all the way through; it should still be in one piece.

Add the garlic to the butter and beat until well mixed and easily spreadable. Season well.

Spread over each side of the slices, keeping a little for the top.

Wrap the whole loaf in foil and seal the edges well.

Put into the oven for about 30 minutes; it should be crisp on the outside and hot and soft on the inside.

Default Quick Muffin Pizzas

Quick Muffin Pizzas

Ingredients:

4 x Muffins
Butter
Jar Tomato/Pasta Sauce
Grated Mozzarella


Split muffins in half and toast lightly on both sides. Butter very thinly while still warm.

Spread tomato sauce on each muffin half and then sprinkle with the grated mozzarella.

Toast until the cheese melts and browns.


NB: I make these in batches and freeze them. They can be toasted from frozen.

For a quick and easy homemade pizza sauce ....

open a tin of chopped tomatoes and empty into a jug
add chopped garlic or garlic puree
add a tablespoon each of sugar and vinegar
add two table spoons of plain flour
stir and mix vigourously
spread on pizza base

It's Crusoe .... can we watch it later, when I get home from school, please, after we've been to the sandy park, and had an ice cream .... can I have meatballs for tea as well please, and popcorn while we watch it?

They were absolutely delicious - thank you.

I also did the braised steak in beer and that's in the fridge to be portioned out and frozen later - although I will be having some for dinner today!

Default Crispy Fried Chilli Beef

Serves two

Ingredients

2 eggs
1/4 tsp salt
2 tsp honey
2 oz cornflour
1 Tbsp dark soy sauce
2 Tbsp wine vinegar
1 cup vegetable oil
1 garlic clove chopped
1 red chilli finely sliced
2 spring onions cut into 1 inch sections
1/2 lb rump steak cut into matchstick strips
1 carrot scraped and cut into matchstick strips

Method
Mix together the eggs, salt and cornflour and toss the beef in this until well coated.

Heat the oil in a wok to 180 degs C and stir fry the beef for 1 ½ minutes or until crispy.

Remove and drain on paper towels.

Reheat the oil and deep fry the carrots for 1 ½ minutes then remove and drain on paper towels.

Carefully pour off most of the oil leaving about 1 ½ tablespoons in the bottom of the wok.

Reheat then add the spring onions, chilli and garlic and stir fry together for about 30 seconds over the heat then add the sugar, soy sauce and vinegar.

Return the meat and carrots to the sauce.

Toss the Hot Fried Crispy Shredded Beef over the heat and serve on a bed of rice or noodles

Tips
As with all stir fry cooking, get everything prepared and chopped in advance.
Don’t use olive oil or sesame oil as neither is suited to cooking at high temperatures.
If you’re unsure about the right heat being achieved and you don’t have a chefs thermometer, try dropping ½ a tsp of batter into the oil. If it sizzles on contact, you’re ready to go!

That looks fantastic!
Personally, I'm not a lover of chilli (it doesn't agree with me) - but I'm already 'tweaking' that recipe for me.............I'll have to dust the wok down!

Actually, I'm rather surprised that nobody's come up with a Chilli Con Carne recipe yet; maybe the BritMovie members are too sophisticated!

You could leave it out if necessary......Mrs Chevyman isn't too keen either. If I make this for the two of us I cook it without the chilli then dress my portion with some finely sliced chilli. That said the chilli has had the edge taken off it in the cooking. Green ones are not so bad.

I've got a simple Chilli Con Carne recipe somewhere. I'll dig it out for the "Britmovie Food Team"

Meanwhile, as you started the topic. Do you think we should open this up for Qs and As?

I thought it stood up well without the chilli, so I'll definitely do that one.

I was already open to Q & As - as long as they're about culinary subjects, recipes posted, 'Hints and Tips' etc.
No posts about 'Healthy Eating' though!

Here are the four items that are essential to the smooth running of the Starry Kitchen:

Cotton Buds
Cocktail Sticks
A couple of toothbrushes
A Back-Scratcher

I couldn't manage without any of those - especially the last one!

Default Chilli Con Carne

Texan Style.
If you tot up the cost of this it's very cheap

Serves two
Ingredients
¾ lb Lean Beef Mince
1 large Onion chopped
2 cloves Garlic chopped
1 large tin Chopped Tomatoes
1 tbsp Tomato Puree
½ to 1 tsp Chilli Powder OR 1 Red Chilli, de-seeded and chopped
1 tbsp Cumin Powder
1 tbsp Vegetable Oil

Method In a large saucepan, using the half the oil, brown the mince over a medium heat taking care not to burn it ( it is better if you do this in batches; if you attempt the whole lot in one go the mince will steam before it cooks)
Remove the cooked mince and set it aside.
Clean the pan (a quick wipe with a few leaves of kitchen paper should do)
Add the remaining oil and fry the onion until soft
Add the garlic and cook for two minutes
Add the cooked mince, chilli and cumin powder and give the whole lot a good quick stir.
Season to taste.
Now mix the tomatoes and the puree, mix well and bring to the boil.
Turn down the heat to a very low simmer, cover and continue to cook for two hours.
Check occasionally and stir if necessary.
Serve on boiled rice

TipsLeave overnight in a fridge if poss. It will allow the flavours to mingle a little longer.
The longer you cook this, the tenderer the result.
Freezes well. Increase the quantities in proportion and freeze the rest.
Serving options … top with grated cheese.
